Spicy Stir-fry Beef with Asparagus & Corn on the Cob

Servings: 3
Preparation time: 10 minutes
Cook time: 20 minutes

Ingredients
1 steak
1 Spanish onion
1 head of asparagus
3 corn on the cob
3 pieces of fire roasted red pepper
½ green pepper
salt & pepper to taste
1 tsp paprika
2 tsp chili sauce paste
1 tsp soy sauce
2 tsp peanut oil
1 tsp butter
3-6 portions of any fruit on the side (optional)

Prepare the onions and green peppers by finely slicing them, and preheat your skillet pan to medium heat.  Add the oil and butter to pan, then add the sliced green pepper and onion, season salt and pepper. You want to cook this down until it starts to caramelize.  Finely slice your roasted red peppers, and add these when the onion/green pepper are about half cooked and starts to brown.

Bring a large pot to a boil, and either steam the corn or boil it for about 7-8 minutes.  Do the same with the asparagus.  If you want more flavor on your asparagus, you can par-boil them half way, then finish them off in a pan with a bit of butter, oil, lots of salt and pepper until they brown.

When your onion/green pepper are about ¾ done cooking – take out the steak and slice it thinly.  Season with salt, pepper and paprika and add it to your pan with onions and add the chili sauce paste.  Mix well, if the steak is thin, it won’t take too long to cook, when it’s got about 1 minute left, add soy sauce.

Plate, and enjoy.
