Honey Hoisin Pork Chop Salad

3 thick pork chops
3 servings of your choice of salad mix
¾ cup shredded cheese
1 long English cucumber
1 whole carrot
½ cup radishes
1 green pepper
18 tablespoon of honey hoisin sauce
3-6 portions of any fruit on the side (optional)
salt & pepper to taste
pam spray cooking oil or something low fat
Heat up a skillet pan on the stove to medium heat. While it’s heating up; trim off any excess fat you don’t want on the pork chops. Season both sides with salt and pepper. Spray pan with pam cooking spray. Add pork chops to pan and cook for 8 minutes per side at medium-high heat. For an even healthier choice; BBQ the pork chops instead of pan frying.
Wash your hands after touching pork, and don’t put raw pork on the cutting board or knife you’ll use on vegetables. You don’t want to contaminate anything.
Wash your vegetables with water to ensure they’re clean. Peel the carrot and cut the ends off it. Cut the ends off the cucumber and radishes also. Shred the carrots or finely julienne then thinly slice the radishes and cucumber. Core the green pepper and slice it up. When you are cutting green peppers, ensure that the outside skin side is face down.
Keep an eye on the pork chops so that you don’t overcook and dry them out.
Start assembling the salad; take 1 serving of any salad mix and lay it down in each plate; add 1/3 of your sliced radishes, and cucumbers to each plate. Add 1/3 of your green peppers and shredded carrots to each plate. Add ¼ cup of shredded cheese to each.
Once the pork chops are finished; you can use the same cutting board and thinly slice them. Add 1 sliced pork chop to each plate and top each plate off with 6 tablespoons of honey hoisin sauce.
Enjoy it with 1-2 servings each of fresh fruit. Watermelon, sliced apple or red grape go well with this. This is a great healthy lunch choice.
