Recipe – Chicken & Veggies Stir-Fry on Noodles

Chicken & Veggies Stir-Fry on Noodles

Servings: 3
Preparation time: 10 minutes
Cook time: 25 minutes

Ingredients
3 pieces chicken breast
3 pieces of fire roasted red pepper
2 carrots
1/4 Spanish onion
1 head of broccoli
2-3 handfulls of green bean
3/4 cup of corn niblets
3-6 servings of rice noodle or pasta
salt & pepper to taste
1 tsp chili sauce paste
6 tsp soy sauce
2 tsp peanut oil
3-6 portions of any fruit on the side (optional)

Prepare all the veggies, wash and cut the ends off the green beans.  Wash and cut the broccoli.  Peel, wash and thinly slice carrots.  Peel the onion and cut it into long slices.  And slice the roasted red peppers.

Preheat a skillet to medium heat, add the oil.  Add carrots and onions, season with a bit of salt and start sweating them.  When the onions start to turn transparent, add the green beans, roasted red pepper, and corn niblets.  Season with a bit of salt, and lots of pepper.  When the veggies start getting a little caramelized, you can add the broccoli.   When everything is cooked through, add some soy sauce, and remove from pan to set aside.  You’ll use the same pan for the chicken.

Start boiling water in a large pot, add some salt.  When it comes to a boil, add the noodles or pasta of your choice.  Follow the instructions to cook.

While the water is boiling, cut up your chicken breasts into bit sized pieces.  Add a bit of oil back to the pan and add the chicken.  Season with salt and pepper.  When the chicken is almost fully cooked, add the chili sauce paste, and soy sauce.  Add all the veggies back to the stir-fry and heat everything up.

Plate noodles, add a bit of soy sauce to them, then serve stir-fry over noodles.  You can also serve some fresh fruit on the side.
